Making Betty White’s Chicken Wings Bake

I’m sure we’ve all heard the news about the passing of the great Betty White; this iconic woman has been apart of my life and television viewing since I was young so I was very upset to hear about her shuffling off the mortal coil. 2021 just could not go quietly could it? I wanted to do a little tribute to Betty just to say thank you for being a friend so I’ve decided to make her famous chicken wing bake. I am getting this recipe from the ‘Celebrity Cookbook’ by Johna Blinn but there are certainly copies of this recipe online as well. At the current moment, I’m home alone for a few days and don’t think I can eat 4 pounds (or 1.8 kilos) of chicken wings …. I mean I could but I’m not going to admit it, so I’ll be halving the recipe.

Ingredients for Betty White’s Chicken Wings Bake
4 pounds (1.8 kilo) of chicken wings, cleaned
1 cup soy sauce
1 stick of butter, melted
1 scant cup brown sugar
1 tsp dry mustard

Method
-Arrange chicken wings in a deep bowl
-Prepare marinade by combining the rest of the ingredients
-Pour marinade over chicken wings in bowl. Cover and leave at room temp for several hours
-Turn chicken in marinade several times
-Line shallow baking dish with aluminium foil. Arrange chicken wings in dish.
-Spoon enough sauce over wings to dampen them well.
-Bake, uncovered, in 190C (375F) oven for about 1 hour or until chicken in tender
Serve as an appetizer or entree!

This recipe is super simple to follow and the only thing that I found difficult was leaving chicken just out on the bench (keep in mind it’s currently the Aussie summer) so I cranked up the air con just incase. I let the marinade sit for 3 hours as I was getting hungry and couldn’t wait any longer. The hour in the oven feels like an eternity but by golly did my house smell delicious.

Once the chicken was ready to eat, it was mind blowingly good. I am so glad Betty White left behind an incredible filmography, charity work and this chicken wing recipe. The chicken is crispy on the outside but still juicy on the inside. The flavours are a delicious sweet and salty mix but I think adding some spicy/heat would really elevate the recipe a little bit more. There are a few variations of this recipe which add garlic powder or honey, but I wanted to stick to this official recipe from my celebrity cook book as the recipe’s themselves were submitted by the celebrities.

This recipe would be perfect for an appetizer or an entree and some cream based sauce would go down a treat. I ate my serving with coleslaw and it was the perfect side. I would highly recommend this recipe and I will definiely be making this chicken again whenever I have friends over next.
